Karkade - Hibiscus Iced Tea it's a traditional Sudanese drink, typically served during month of Ramadan. This iced tea is made of dried Hibiscus flowers, has a herbal-cranberry flavor and naturally deep red color.
The first time I tried Sudanese Karkade - Hibiscus Iced Tea was, when one Sudanese family invited us for Iftar. This drink they served traditionally during Ramadan in large jars. The Hibiscus Iced Tea impressed me with its natural color.
At first, when I tried the Karkade drink, I noticed a sweet herbal-cranberry flavor, typical for Hibiscus. Well, I didn't hesitate to ask for a recipe.
I had no idea what makes the drink's color so deep red. There are drinks, that use the color carmine extracted from the cochineal insect, which I like to avoid it, as are not healthy and mainly harmful. ''This beautiful natural color grabbed my heart...''
I found out that Sudanese people made Karkade drink from a well-known herb I used to drink for years. Herbs are called Hibiscus (Hibiscus sabdariffa L.). These flowers are usually added to fruit teabags what makes your tea looks red. What an amazing natural color it has!
This recipe is simple, just consider a couple of hours ahead if you want to make it on time. I don't prefer the boiling method, as Hibiscus Iced Tea taste better with the cold infusion method. Once, I tried to pour boiling water over hibiscus flowers, but the drink tasted bitter. Therefore, infuse Hibiscus flowers in water for at least 3-4 hours, preferably overnight. I'm keeping it in the fridge in a large jar. I'm adding 1/4 cup of sugar for 1 liter of iced tea.
