These mini cheese Pide are traditional Turkish pies, perfect as a lunch or a snack. It's a soft buttery pastry filled with the yummiest cheese filling! So let's going to learn how to make them from scratch!
I've tried many cheese fillings for Turkish Pide, but this filling is one of my favorites. This cheese filling is fresh, cheesy and super delicious. Here are all ingredients that you need to make the Pide cheese filling.
In a large bowl crumble feta cheese and continue adding grated mozzarella and chopped fresh parsley. Half the tomatoes and remove flesh and seeds, chop tomatoes finely and add to the bowl with black cumin seeds.
For the cheese pide, I'm making yeast and yogurt-based dough. This dough is very soft and light and it holds its shape when it's being shaped. Here are the ingredients that you need for this dough

In a large glass bowl combine water, milk & sugar, pop into a microwave oven and heat for about 1 minute. Into a lukewarm mixture spill dry yeast and let it rest for about 5 minutes. Don't mix the yeast with the mixture, wait until the yeast is activated.
Once the yeast is activated, add room-temperature softened butter, yogurt, salt and egg white. Mix thoroughly.
Then gradually add flour and knead the dough for about 5 minutes, until the dough became elastic and smooth.
Cover the dough with tea towel and let it rise in a warm place for about 45 minutes, or until double in size.
Once the dough has risen in size, divide it into small peach size balls and let them rest covered for another 20 minutes. Using your fingers or the bottom of the glass, flatten the dough balls and create a hollow in the center. If desired make cuts around the edges of the the dough using a knife.
Fill the hollow with prepared cheese filling, lightly whisk reserved egg yolk and brush it over the sides of the dough.
Bake them in preheated oven to 190°C (375 °F) for about 15-20 minutes. Remove the Pide from the oven and lightly brush the sides with butter. Let it rest, covered for about 5 minutes. Serve the cheese Pide warm and enjoy!
