I’m excited to share with you an irresistible treat inspired by the iconic Knafeh Pistachio Chocolate from Dubai. These Pistachio Knafeh Bonbons are a creative twist on that classic dessert, combining rich chocolate, toasted Knafeh, and creamy pistachio cream. The best part? We’re going to make them look absolutely stunning with a galaxy effect using colored white chocolate. Let’s dive into this fun, colorful recipe!

Ingredients:

  • 250 g milk chocolate, chopped
  • 60 g white chocolate, enough to create the galaxy effect (around 60 g)
  • Dr. Oetker Green Gel Food Coloring (a few drops)
  • 1 tsp turmeric powder (for natural yellow-orange color)
  • 100 g Pistachio cream (homemade or store-bough)
  • Knafeh pastry (you can find this in Asian stores)
  • Ghee or olive oil, for toasting the Knafeh (1-2 tbsp)

Tools:

  • Round silicone chocolate moulds
  • Piping bags
  • Double boiler or microwave-safe bowl
  • Freezer space

Make The Galaxy Effect

Start by melting the white chocolate in a double boiler or microwave-safe bowl. If using the microwave, heat it in 20-second intervals, stirring in between to avoid burning.

Once the white chocolate is melted, divide it into two portions. In one portion, mix in the turmeric powder for a rich golden-yellow-orange color. In the other, add a few drops of Dr. Oetker green gel food coloring to achieve a vibrant green. Stir each portion until smooth.

Next, fill two piping bags—one with the green-colored chocolate and one with the turmeric (orange) chocolate. Now, it’s time to create the galaxy effect! Pipe the green and orange chocolate in random directions across the bottom of each silicone mould, making sure to vary the angles for a swirling, galaxy-like appearance.

Fill The Moulds & Set The First Layer

Once your galaxy effect is ready, spoon milk chocolate into the silicone moulds, covering the piped design. Gently shake the mould and tap it on the surface to remove any air bubbles and ensure a smooth, even coat of chocolate.

Place the moulds in the freezer for 10-15 minutes, allowing the first layer of chocolate to set.

Toast The Knafeh

While the chocolate is setting, prepare the Knafeh filling. Heat a pan over medium heat and add 1-2 tablespoons of ghee or olive oil. Add your Knafeh mixture to the pan and toast it until it turns golden brown and crispy. This will give your filling a rich, flavorful texture. Once done, remove from heat and set it aside to cool.

Make The Filling

Once the Knafeh has cooled, mix it with pistachio cream to create a smooth, luscious filling. Make sure the mixture is well combined so you have a creamy texture that will be easy to pipe into your bonbons.

Assemble & Seal The Bonbons

After the first layer of chocolate has set, remove the moulds from the freezer. Add a small spoonful of the Knafeh and pistachio cream mixture into each mould. Be sure not to overfill—leave enough space to cover with more chocolate.

Melt the remaining milk chocolate and spoon it over the Knafeh and pistachio cream filling, ensuring it’s fully covered. Smooth the surface and tap the mould again to eliminate any air bubbles. Place the moulds back into the freezer for another 20-30 minutes until the bonbons are fully set.

Unmould & Enjoy!

Once your bonbons are completely set, carefully pop them out of the silicone moulds. You’ll reveal a stunning galaxy pattern on the outside, with a delicious Knafeh and pistachio cream filling inside.
