It’s a luxurious yet simple recipe that combines the sweetness of dates with the richness of pistachios and the decadence of white chocolate. Ingredients:

  • Date paste – 200 g (this will be about 80% of the entire mixture, giving it that irresistible sweetness!)
  • Oat flour – 25 g (you can grind oats into flour easily in your food processor, so no need to buy it!)
  • Ground nuts (almonds, pecans, or a mix) – 25 g (I love using a combo of almonds and pecans, but feel free to use whatever nut you prefer. It’ll add such a lovely texture!)
  • Olive oil – A touch, just for brushing
  • Pistachio powder – 40 g (finely ground pistachios to coat the rolls and give them a nutty finish)
  • Pistachio cream – (about 50 g; you can easily find this in stores, or make your own by blending pistachios with a little honey or cream)
  • White chocolate – 50 g (for piping and spiraling)
  • Cupcake cases – for serving and giving that perfect presentation

Equipment:

  • Food processor (this will do most of the work, trust me!)
  • Wooden spoon (for creating the hollow in the date roll)
  • Piping bags (one for pistachio cream and one for white chocolate)
  • Bamboo stick (for spiraling the white chocolate)

Make Date Roll

In your food processor, add 25 g of oat flour. If you don’t have oat flour on hand, simply blitz some rolled oats until they’re finely ground. It’s that simple!

Next, add your choice of ground nuts. I love the combination of almonds and pecans, so I use 25 g in total. Pulse the mixture a few times until the nuts are finely chopped but still a little textured. This will add such a nice crunch to the rolls!

Now, it’s time to add the star ingredient: the date paste! This will be the bulk of your mixture, about 200 g. Blitz it all together in the food processor. You want everything to come together into a thick, dough-like consistency. It should hold its shape when you press it together.

Shape and Assembly

Once your dough is ready, turn it out onto a clean surface. Shape the mixture into a long log, rolling it gently with your hands until you have a nice, smooth roll. If it’s a bit sticky, don’t worry — a little oil or water on your hands will help.

Now for the fun part! Lightly brush the outside of the date roll with a tiny bit of olive oil. This will help the pistachio powder stick beautifully. Roll the log in the pistachio powder until it’s completely coated in that gorgeous green color. It’s like nature’s glitter!

Take your wooden spoon (or a similar kitchen utensil) and gently press down the center of the roll to create a little hollow. You don’t want to squish it flat, just enough to make a space for that rich pistachio cream!

Now, take your pistachio cream (I love the nutty, slightly sweet flavor it adds) and pipe it into the hollow. You can use a piping bag for precision here. Fill it generously, but don’t overstuff!

Melt your white chocolate and transfer it to a piping bag. Pipe long, thin strips over the filled roll, and then grab a bamboo stick (or anything with a sharp point) to gently swirl the chocolate into a beautiful spiral pattern. It’s like a little artistic masterpiece on top of your roll! Once your date roll is beautifully decorated, slice it into small, elegant diamond-shaped pieces. Place each one in a cupcake case for a lovely presentation.

  • Storage: These date rolls are best enjoyed fresh but can be stored in an airtight container for a couple of days. I recommend keeping them in the fridge to preserve that beautiful pistachio cream.
  • Customize: Feel free to swap out nuts or even add a touch of cinnamon or cardamom for extra warmth and flavor.
