Pancakes are one of the ultimate comfort foods. If you are looking for a perfect pancake recipe, here’s one. I guarantee the fluffiest pancakes ever! These pancakes are easy to make and you won’t need any fancy ingredients. I love these sugar-free banana pancakes. The natural sweetenest of bananas makes them completely sweet, moist and fluffy.

Let’s the go-ahead to my secrets. I never use store-bought mixtures. These pancake mixtures are full of additives and conservators. Honestly, you don’t really need them. It contains just flour, sugar, salt and additives.

What you Need to Make Banana Pancakes

If you have a some bananas and couple of pantry ingredients, you have everything what you need.

Bananas

More ripe more better. Ripe bananas are extremely sweet and the best for pancakes. You’ll need around two medium size mashed bananas.

Eggs

Eggs will keep pancake batter more solid and it will make easier to flip pancakes.

Milk

You’ll need just very small cup of milk, around 100 ml, less you’ll add milk more fruity pancakes will be.

Baking Powder

Cinnamon Powder

Coconut Oil

Flour

  1. Combine flour, baking powder and salt and mix well.

  2. In separete bowl mash bananas with fork, until is texture is without any big chunks, add eggs and whisk until well combine.

  3. Add a milk, mix and slowly start to add flour. Be careful, you need to sift flour over mixture or just gently sprinkle while mixing , to avoid big chunks.

  4. When mixture is ready, on preheated non-stick pan spread pancake butter using small scoop, cook it on medium heat. 

    After minute flip it up to other side and just cook it for a few seconds until golden brown. From butter you can make around 15 mini fluffy pancakes. Stack them on plate one by one.

  5. Decorate them with fresh strawberries, or any berries you like.

  6. Drizzle your favorite syrup over them, this step is completely optional. I simply drizzled maple syrup for extra sweetness.

  7. Serve!
