Almond Fudge Sweet with Cardamom (Badam Burfi)

Let me introduce a new family favorite. Almond Fudge Sweet — Badam Burfi Indian dessert, which is mildly sweet and has a light fudge texture. This almond fudge is topped with roasted sesame seeds and almonds flakes. Thus, makes the texture soft inside and crunchy on top. This aromatic dessert with cardamom will melt in your mouth.

Dessert is more likely served on a special occasion, with upcoming Ramadan, this dessert would be a perfect choice. I like to add more nuts to my diet while fasting. Undoubtedly, nutty desserts are very popular during Ramadan. They are a good source of proteins and vitamins. Almonds contain vitamin E, iron, and copper. That’s a reason why I like to use almond flour for most of my baked desserts and cookies. Almond flour is a very healthy substitution for all-purpose flour when it comes to baking.

Almond Fudge Sweet is super easy to make and can be done in under 15 minutes. What you need are just simple pantry ingredients. Sweet condensed milk, clarified ghee, almonds, and cardamom.

About the Recipe Ingredients

Almonds — This is the main ingredient of the recipe, you can use ground almonds, as well as almond flour, which is sold at the store. Firstly, if you want to make your almond flour, don’t forget to remove almond skin. Place raw, unsalted almonds in a large bowl, pour hot water, and let it soak for about 5 minutes. Skin will start falling apart very easily, remove almonds skin. Gently squeeze almonds between your finger and thumb. Then dry them with a kitchen towel. Roast them as well in the oven to dry completely for about 5 minutes. Finally, blend almonds in the food processor, make sure they are ground evenly.

Sweet Condensed Milk — which is used in this recipe, creates a chewy texture with almond flour, which is surprising, not very sweet. I would say is it a perfectly sweet balance with a nutty flavour.

Ghee — clarified ghee butter, have less lactose and could be used as cooking oil. It has an amazing aroma and is very popular in Middle Eastern cooking.

Cardamom — this recipe ingredient is highly aromatic spicy and your kitchen will smell amazing after using it in any dessert.

Sesame Seeds - are optional, but I like almond fudge with them more. Sesame seeds make the dessert texture complete. Crunchy on top and soft inside. So, If you like sesame taste in desserts, don't skip them.

How to store Almond Fudge

Store in an airtight lunchbox or container, up to 4 days. Use parchment paper to prevent sticking together. Serve cool or at room temperature. When we celebrating a special occasion, dessert goes perfectly with Masala tea.

Description

Easy Middle Eastern dessert made of almond flour and aromatic spicy. Coated in sesame seeds and almond flakes.

Ingredients
  • 1 tsp ghee
  • 200 g ground almonds
  • 100 ml sweet condensed milk
  • 1/4 tsp ground cardamon
  • pinch salt
  • For Topping
  • Roasted Almonds Flakes
  • Roasted Sesame Seeds
Instructions
  1. Preheat non-stick pan on medium heat and melt ghee on pan. Add almond flour, and break any chunks in almond flour. Add sweet condensed milk and stir well for about 5 minutes until everything well combine.

  2. Almond Fudge Method

    Turn off the heat and let batter cool down. Cut out a parchment according to size of your pan or small dish.  Spread cardamom (optional) and sesame seeds in the pan.

  3. Spread batter evenly with a spoon, or wait until the batter is not enough hot to touch. Then spread with fingers into a rectangle shape to about 0.5 cm thick layer. Shape corners with a palette or knife.

  4. Almond Fudge Method

    Sprinkle roasted sesame seeds over batter from one side. Using parchment paper gently press and tap sesame seeds with hands into the batter. Then turn up the batter and spread roasted almond flakes from another site. Tap with hands, seeds and flakes will set into the batter.

  5. Almond Fudge Method

    Refrigerate, but you also skip this step. When the dough cools down will get a good texture and can be easily cut. Cut into 3 cm squares using a long sharp knife. If the dough sticks to the knife, wash and wipe the knife.
