These Pistachio Bonbons are creamy, nutty, and beautifully elegant. Each bonbon features a smooth green chocolate shell filled with pistachio cream and a soft biscuit center made with cocoa, caramel, and crunchy peanuts. The result is a rich bite with multiple textures โ€“ creamy, slightly fudgy, and lightly crunchy.

They are simple to prepare and require no baking. Because of their beautiful pistachio color and delicate finish, these Pistachio Bonbons are perfect for Ramadan tables, Eid desserts, or any special gathering.

INGREDIENTS

  • Chocolate shell
  • 200 g white chocolate
  • 2 tbsp pistachio cream or a few drops green food coloring
  • Biscuit center
  • 10 -12 plain biscuits
  • 1 tbsp cocoa powder
  • 2 tbsp chopped peanuts
  • 2โ€“3 tbsp caramel sauce
  • Filling and decoration
  • Pistachio cream
  • Ground pistachios for sprinkling

What Mold You need

For these Pistachio Bonbons, I used a ribbed silicone chocolate mould that creates the elegant fluted shape you see in the photos. Silicone moulds are ideal because they make it easy to release the bonbons once the chocolate has fully set, while also keeping the edges neat and defined.

You can find very similar moulds on Temu, where they are usually sold as silicone chocolate or dessert moulds. They are affordable, reusable, and perfect for making bonbons, mini desserts, or mousse treats at home.

If you cannot find the exact mold, any small silicone chocolate mold will work well for this recipe.

Chocolate shell

First, melt the white chocolate using a microwave or a double boiler, stirring frequently until smooth.

Next, mix in pistachio cream to naturally tint the chocolate or add a small amount of green food colouring to achieve a pistachio colour.

Then spoon or pipe the chocolate into silicone moulds and spread it evenly across the sides so the entire mould is coated.

After that, place the mold in the freezer for about 10 minutes until the shell is set.

Biscuit centre

First, place the biscuits in a food processor and blend them into fine crumbs.

Next, transfer the crumbs into a bowl and add cocoa powder and chopped peanuts.

Then add caramel sauce gradually and mix until the mixture becomes sticky and holds together. The texture should allow you to form small soft balls.

Finally, shape the mixture into small balls that will fit inside the bonbon mouds.

Assembly

First, pipe a small amount of pistachio cream into the bottom of each chocolate shell. Next, place a biscuit ball into the center and gently press it down.

Then pipe another small swirl of pistachio cream on top. Finally, sprinkle ground pistachios over the center and chill the Pistachio Bonbons in the fridge until fully set. Carefully remove them from the molds before serving.
