Peanut Butter Bonbons

INGREDIENTS

  • 100 g peanut butter
  • 2 tbsp honey
  • 20 ml water
  • 100 g rice crispies
  • 60 g ground peanuts
  • 200 g white chocolate (for the shell)
  • Caramel or Biscoff cream (for the center)

PREPARE THE FILLING

Firstly, mix the peanut butter, honey, and water in a bowl until smooth and well combined. Then, add the rice crispies and ground peanuts, stirring until everything is evenly coated. Set the filling aside.

CREATE THE WHITE CHOCOLATE SHELL

Melt the white chocolate gently in a microwave or over a double boiler. Using an oval-shaped silicone mold, fill each cavity with a layer of melted white chocolate, ensuring it covers all the edges. Tap the mold to release any air bubbles and freeze for a few minutes until the chocolate is firm.

ASSEMBLE THE BONBONS

Once the white chocolate shell has set, add a spoonful of the peanut butter filling into each cavity, pressing it gently to ensure an even layer. Next, pour the remaining white chocolate over the filling, sealing the bonbons completely. Before the chocolate fully sets, carefully add a dollop of caramel or Biscoff cream in the center of each bonbon to create the golden “eye.”

CHILL AND SERVE

Finally, freeze the bonbons for 15–20 minutes or until completely set. Gently remove them from the mold, and your Healthier Peanut Butter Bonbons are ready to impress!

NOTES

  • For a vegan version, use dairy-free white chocolate and maple syrup instead of honey.
  • These bonbons can be stored in an airtight container in the fridge for up to a week.
